Veggie wraps are super healthy, easy to make and perfect for meal prepping. Whether you prefer a tortilla wrap, a lettuce wrap, a collard wrap or even a sweet dessert wrap, there’s something in this recipe collection for you!
I love wraps, you love wraps, we all love wraps! My veggie wraps are consistently the most popular recipes on the blog and for good reason. They’re super cheap to make with basic ingredients and perfect to throw together when you’re in a hurry.
What I love most about veggie wraps is that they’re the perfect leftover-user-upper. Got half a red pepper leftover from last night’s pasta salad? Perfect! Slice it up and add it to your lunch wrap! Made a bit too much rice for your stir fry? Roll it up and take it away!
Now, I’ve always been an advocate of meal prep. Not only for the convenience of grabbing your lunch from the fridge on a busy morning and not worrying about dinner after a long day at work, but also it’s guaranteed to save you money, which is particularly important if you’re on a tight vegan budget.
When you meal prep you’re forced to think ahead and plan everything out for the week. We all know that making a list and sticking to it is key to saving money at the supermarket. Equally obvious is the fact that taking a packed lunch will save you tons of money each month!
Veggie wraps are a favourite of meal preppers everywhere! Even if you don’t meal prep days in advance, a wrap can be quickly prepped the night before and ready to grab and go in the morning.
One thing to keep in mind when you’re meal prepping veggie wraps, however, is that you may need to adapt the recipe in order to prevent sogginess. This could mean changing the order of the fillings so as to sandwich the sauce or dressing between the veggies and stop it from wetting your tortilla.
Another important tip is to allow any cooked ingredients to cool completely before putting together your wraps. Similarly, allow any freshly washed greens to dry completely. Lining the entire tortilla with your dried lettuce or spinach will act like a barrier to insulate the wetter ingredients in the middle.
If all else fails, keep your wetter veggies (like tomato) in a separate container and add them to the wrap when you’re ready to eat.
